The Weekend

This past weekend was very busy for us (like most of our weekends :)  On Friday we celebrated my dad's birthday.  We called and talked to him on the phone but on Saturday I went out to dinner with him and the rest of my family at CJ's restaurant in Bloomington and then we went to the Ice Races.  Let me tell you that was kind of crazy!!!  At one point there were 27 4 wheelers on a hockey rink racing!  My nephew who is 3 seemed to love it and told Grandpa that he needed a mini dirt bike with training wheels so that he could race next year.  Jeff was also at the ice races, but had bought tickets before we did so he sat with his group of friends.

Saturday morning I ripped out the old flooring in our 1/2 bath and retiled it, I'm almost done just some pieces to cut and grout.  We also got our new vanity for in that bath and are anxious to get it installed.  Sunday after we slept in we decided to run to Menard's ( the store where most of our money goes I feel) and return some things we weren't going to use.  After returns we decided to go browse, ahem, buy more stuff.  We ended up picking up some more laminate flooring so we should have enough to finish now.  Luckily it was on sale again :)  We also picked up some tile to tile around the fire place.  I can't wait to get the floors in and the tiling done and take a little break from remodeling!  Here are some pictures from the weekend...

Recipe worth trying

Last night I decided I was going to try a new recipe because I was tired of having the same thing for dinner every night so I made Salisbury Steak with Mushroom Gravy and it was yummy!

Here is the recipe

  • 1/3  cup  grated onion, divided
  • 1/2  teaspoon  black pepper
  • 1/4  teaspoon  salt
  • 2  garlic cloves, minced
  • 1  pound  ground sirloin
  • Cooking spray
  • 1  tablespoon  butter
  • 8  ounces  cremini mushrooms, quartered ( I just used canned mushrooms)
  • 1/3  cup  dry red wine
  • 1 1/4  cups  fat-free, lower-sodium beef broth
  • 1  tablespoon  all-purpose flour
  • 1  teaspoon  red wine vinegar

1. Combine 1/4 cup onion, pepper, salt, garlic, and beef. Shape into 4 (1/2-inch-thick) patties. Heat a skillet over medium-high heat. Coat with cooking spray. Add patties; cook 3 minutes on each side or until browned.

2. Melt butter in pan. Add mushrooms; sauté 4 minutes. Stir in wine and remaining onion; cook 2 minutes. Combine broth and flour; add to pan, and bring to a boil.

Cook 5 minutes or until thick. Add patties and vinegar to pan; cook 2 minutes.

The finished product with green beans and mashed potatoes.

Jeff & I Both liked it so this will now be in a cookbook and be put to good use!

Looking back

When we got a new computer a few months back, I looked through a lot of old pictures that were on our old computer.  It's so funny to look back to where Jeff & I began over 7 years ago...
Our First picture together in 2004

At Nathan and Jena's wedding
Being the DJ for my younger brother's After prom Party- just a few days before Jeff left on the wheat run.
2006 when Jeff spent the summer working on the Wheat harvest- looking back it made us so much stronger and I'm forever grateful for the experiences he had.  At that time it was the hardest thing and I cried pretty much every time I talked to him!

2 weeks following our wedding, Jeff was in a wedding of our really good friends Allen & Chasity.  I wish right now I were that tan and just on the way back home from a week in Jamaica.

Coming in the next few days- pictures from Jamaica, and a few new recipes we have tried recently!

Have a good day!!

5 Months ago yesterday Jeff & I were married.  Looking back I can't believe it has already been 5 months, and I look forward to many, many more years together.  Here are some shots from our wedding day!

We had the best wedding party.  They are all incredible people and we are fortunate enough to have them as our friends!

Our Nephew Sid was the ring bearer and he was pretty darn cute :).

We didn't do anything special because is 5 months really that special?  Not in my eyes but it has been a great 5 months.  This weekend the hubby is on a guys trip snowmobiling in Wisconsin so I hope he's have a blast.  I'm hanging out in the warm house with the extra special baby---
Our Baby Boy Kuba.

Hope you have a great weekend!
